K-RING Cupcakes 1/3 cup shortening 2 cups sifted cake flour 1 cup sugar 2 teaspoons baking powder 3/4 teaspoon salt 3/4 cup milk 1 unbeaten egg 1 teaspoon vanilla OVEN 375° Stir shortening just to soften. Sift in dry ingredients. Add 1/2 the milk and the egg; mix until all flour is dampened. Then beat vigorously 2 minutes. Add remaining milk and vanilla; beat 1 minute longer. Fill paper-lined cupcake pans 1/2 full. Bake in moderate oven (375°) 25 to 30 minutes. Makes 18 to 20 cupcakes. High-altitude changes If you happen to live in a high-altitude region (3,000 feet above sea level and up), you may find that many cakes will tend to fall and give unpredictable results.
